Don't push this corn dish
There are so many choices in the supermarkets now, fresh, frozen and canned are all vying for our attention, with my perennial favorite being canned corn. I've had the best luck using canned versus frozen, with the water content never being accurate in frozen corn. Some frozen corn, depending on how long it's been in the freezer, can pick up too much moisture and actually taste more like the bag it's been frozen in. I've gotten more creative with corn than pretty much any other veggie when it comes to changing how it appears with my meal. Veggies add some vitamins and color to your dinner, and changing how you present them can also encourage a finicky child to eat more vegetables, or how an adult also sees that little side dish. The summer time is easier to put something together to serve up than it is in the wintertime, so that is why the creative juices flow more now. You can just open a can of corn, heat it up and let it go at that, but if you want something a little fancier, today's recipe is for you. I've also made this for a holiday side dish with great reviews. Corn pie is a southern treat that can have many variations. I put together what I liked and I feel my variation can stand up to anyone's. It's simple, inexpensive, and adds some nice flavor and texture. I've served this with such things as meatloaf, pork chops, fish, and even steak. At this time of year when we know spring is close, but we still have a few nights to want to be in the house, and are looking for more comfort food, this recipe is nice to use. It's filling as well, which is another perk. It's all ingredients most of us have in the house anyway.
